miscusi is an italian food retail that serves quality and affordable "fresh pasta" dishes in a joyful and inclusive environment. We are a "grande famiglia" with already three restaurant in Milan that we call "home". We will be rolling out up to 10 new stores in Italy within the end of 2019 and start planning Europe expansion. To keep on improving our growth strategy we need a Food Preparation Manager.

This job contributes to miscusi success by managing food: from preparations (raw materials – recipes) to kitchen operations.

As food preparation manager you will be the focal point of interaction with company’s suppliers, brigata teams and Headquarters. Occasionally you will supervise and lead kitchen teams in new openings and in delivery special projects in tasting new recipes, fixing kitchen standard procedures, testing kitchen layout.

Key Accountabilities

  • Be part of an energetic team, receiping fresh pasta dishes delighting thousands of customers every week.
  • Assists with in-house and on site presentations as needed. Assist in training new hires, demonstrating procedures and techniques. Assist operations with technical issues that may arise.
  • Contribute to business objectives and strategic product development by assisting with the evaluation and improvement of existing product lines to improve quality and maximize efficiencies.
  • Develops and delivers effective communications to provide partners at all levels with appropriate awareness and knowledge of miscusi standards, program updates and process changes.
  • Interfaces with Operations Team and Store Managers in the development of new initiatives (condimento stagionale, settimanale).
  • Monitors and analyzes the scale-up, first production and overall quality of the developed product through the commercialization process and identify areas for improvement to facilitate kitchen operations.
  • Leads, provides support and direction as required by means of audits, trainings and consultations to ensure understanding and compliance with applicable standards.
  • Oversees training and development of staff directly and/or indirectly and provides coaching, direction and leadership support.

Requirements

  • Familiar with food industry, especially fresh food industry technology and best practice (previous experience with pasta, flour, grains will be a plus).
  • Ability to manage multiple, complex projects and responsibilities in a fast-changing environment.
  • Ability to communicate effectively and influence internal customers and external suppliers.
  • In depth understanding of food safety, food labeling and trends.
  • Ability to manage multiple priorities and deliver accurate outcomes.
  • Product development.
  • Raw materials/product interaction.

Summary of Experience

  • 3-5 years’ experience in a well-established high end food service facility and in catering
  • Experience with high volume kitchen and front of house operations
  • Very high energy. Ability to anticipate and solve problems
  • Able to work to high standards as well as policies and procedures
  • Strong interpersonal skills. Must possess strong team building skills
  • Must be very well organized and effective with planning, and time management skills
  • Must be very friendly, outgoing, customer service oriented
  • Must have experience and proven track record for training culinary brigade
  • Ability to work under pressure and meet deadlines
